Sanaig is the latest release from the Kilchoman distillery and complements Machir Bay. It is a blend of 4 and 5yearold exbourbon and exOloroso sherry casks, with a higher proportion of sherry casks compared to Machir Bay. The history of the Kilchoman distillery is brief: construction began in 2004, and after some difficulties, production started at the end of 2005. The first cask was filled on December 14, 2005. Kilchoman is located slightly east of the village of the same name and was the westernmost Scottish whisky distillery until Abhainn Dearg on the Isle of Lewis took over that title. Kilchoman is a very small distillery, producing only about 100,000 to 110,000 liters of pure alcohol. Only Edradour produces less, excluding microdistilleries like Loch Ewe. What makes Kilchoman unique is that all production steps are carried out onsite. The distillery also grows its own barley. It is often mistakenly assumed that Kilchoman grows all its barley itself. In fact, about 100 tons of homegrown barley (with 2025 ppm peat) are used, while an additional 250 tons of 50 ppm peated malt are purchased from Port Ellen Maltings. In addition to other manufacturing processes such as mashing, distilling, maturation, and finishing, Kilchoman also bottles onsite.
