The original Hatcho miso from Maruya. 99.9% soybean, super-dark miso has a fantastic dark chocolate / savoury taste thats rich in umami. This miso paste is dark brown in colour, with a thick, smooth texture. It is often described as having a deep, earthy taste with a hint of sweetness, and it can be used in a variety of dishes, including soups, stews, marinades, and sauces. Hatcho miso is made using a unique process that involves steaming and then crushing the soybeans, mixing them with salt, and then fermenting the mixture in cedar vats for a minimum of two years.
